Sparkling Yuzu Jelly Soda Drink 1

Yuzu Jelly Soda

Come chill over a glass of Yuzu Jelly Soda / Cider (the Japanese calls it Yuzu Cider) 

Wee added jelly into it to kick the fun up a notch… okay. make that 10 notches! 

This is the absolute go-to drink on super hot, skin-cancerous days like what we’re having lately in Singapore! 

Trust us, this Yuzu Jelly Soda is bests for entertaining and hosting! Good with both the young and old! Certainly, one glass is not enough! It made us feel so good that we just just had to share it with you folks out there!  

We used Umaji Village Yuzu Cider, Yuzu Tea Jam and Umaji Yuzu Juice from Japan in this recipe and they are available at Mediya and Isetan (in Singapore). You you can use any similar juices and jam if you make it at home but I’d strongly recommend using Japanese yuzu if you can. The fragrance and citrus tones of the Yuzu is more distinctive. 

INGREDIENTS

FOR THE JELLY

  • Yuzu Jam – 2 tbsp 
  • Yuzu Juice – 30 ml
  • Water: 220ml 
  • Granulated sugar 30g (I used Taffy’s low GI sugar in the video. )
  • Japanese Agar 12g ( you can use Kanten powder, gelatine or agar agar if you can’t get Japanese Agar powder. Just follow the packet’s instruction to set the jelly)
  • Gold Leaf Sprinkles – a little (optional)

FOR THE DRINK

    • Japanese Cider (or carbonated yuzu juice) – 1 bottle (280ml)
    • Yuzu juice (sweetened) – freeze to make ice. Add in yuzu peel if preferred. 
    • Ice cubes
    • Mint leaf & Edible Gold Flakes as garnish.

METHOD

  1. Prepare yuzu juice ice : add yuzu peel  (optional) and freeze yuzu juice into ice cubes. 
  2. Prepare yuzu jelly: Add water, yuzu jam, sugar and yuzu juice into a pot and warm up over low heat. 
  3. When the sugar has dissolved, add in Japanese agar powder and keep stirring until the powder dissolves.
  4. Remove from heat and sprinkle gold leaf/ dust (optional) then pour into a mould when it has cooled slightly. 
  5. Chill in the fridge until jelly is set. 
  6. Half full a glass with regular ice and yuzu juice ice. 
  7. Add in yuzu jelly and mint leaves. 
  8. Lastly, fill the glass with carbonated yuzu Soda / cider. 
  9. Garnish with Gold Leaf and mint. 
  10. Serve cold.
