115 g organic flour 5g for matcha powder 110 g powdered sugar 120 g butter 56ml aquafaba (i use one from Biona chickpeas can, it’s thick and need no further reduction on the stove) 150-200g chocolate chips mini (i use enjoylife mini chips)
1) Preheat at 180 degree, and turn down to 150 during baking. Bake for 10 mins
2) Whip butter and icing sugar till soft and fluffy.
3) Add in Aquafaba (brine water from chickpeas). Whip until combined.
4) Add flour and matcha powder then whip till well combined (no lumps).
5) Spread onto Langue de chat mould and bake for 10 mins. *Remember to turn up the oven temperature to 180 after every batch and then back to 150 when baking*
6) Let cool before filling it with your choice of chocolate (white, milk or dark).
