Easy Neko Cat Bread Recipe !

NEKO CAT BREAD RECIPE
INGREDIENTS
Bread Flour 210g
Instant Dry Yeast 5g
Sugar 20g
Egg 20g
Salt 4.5g
Milk 10g
French Butter 40g
Water 115ml
Cocoa Powder For Dusting
Butter For Greasing
HOW TO MAKE:
1) In a large bowl, add in Bread Flour, Dry Yeast, Sugar, Salt, Skim Milk, Butter and Egg. (Do not add yeast and salt in the same area). Mix well.
2) Gradually add water, a little at a time, into the dough mixture from step 1 and knead well until the stickiness is gone. (About 10-15 minutes)
3) First Fermentation:
Roll the dough into a ball shape and put it in a bowl. Cover it with a cling wrap and put it in the microwave with a fermentation function, for 50 minutes.
Alternatively, leave it in a warm place (27degree – 30 degrees Celsius) for 40 – 60 minutes.When the dough has risen to 2-2.5 times its original size, dust your finger with some bread flour and insert it into the dough to test the readiness. If the hole retains its shape, the dough is read.
4) Remove the dough from the bowl and de-gas it. Roll out and flatten the dough and fold into quarters and then shape into a ball. Next cut into 3 portions (2 portions for the ears & 1 bigger portion for the head)
5) Cover the dough with a damp cloth and let it rest for 15 minutes.
6) After resting the dough, use a rolling pin and stretch each portion out to a length of about 25-28 cm. Turn it over and then fold into thirds. Use your fingers to pinch and seal the dough then gently shape it into an oblong / sausage shape.
7) Grease the Neko Cat Bread Tin, including the lids. Invert the tin and put the dough (ears) into the vents for the ears. Then gently place the head portion in and cover it.
8) 2nd Fermentation:
Let the dough ferment in the microwave with fermentation function (50 mins) or in a warm place (35degree Celsius) for about40-50 minutes.
9) Put the tin into a pre-heated oven and bake it upside down, at 180 degrees Celsius for 35 minutes.
10) Remove the bread from the tin while it is still hot and let it cool down on a cooling rack.
11) Once cooled, slice the bread and place the stencil over the surface of the bread and dust cocoa powder over it to create the cat’s face/ expressions.
- Baking time may vary depending on your oven.
- To get equal and nice shape, cut away both ends of the bread after removing it out of the tin.
- Please ensure that the tin is evenly greased. The dough will stick to any ungreased areas and it may be difficult to remove the bread after baking.
- Please use mittens while unmoulding as the tin is hot.
